Feb. 4, 2025 – INDIO, CA – Enjoy scrumptious Valentine’s Day menus created by the award-winning culinary team led by Executive Chef, Freddy Rieger at Bistro, POM, and Fresh Grill Buffet on Friday, Feb. 14, 2025.
At Bistro enjoy a Chateaubriand for two featuring center-cut beef tenderloin, sliced and served with tallow-herb roasted chateau potatoes, baby carrots, oyster mushrooms, asparagus, Marsala demi-glace with Bearnaise sauce ($120). Regular menu items will also be available. 5 p.m. – 10 p.m.
POM will serve a succlent lobster fettucini rosé featuring sauteéd Maine lobster meat, fettucine pasta, roasted red bell pepper, asparagus tips, parmesan-rosa cream sauce, and garlic crostini ($44 per person). Regular menu items will also be available. 5 – 11 p.m.
Both The Bistro and POM will offer a red velvet lava cake for dessert that is perfect for sharing. This sweet treat is served warm with vanilla ice cream, raspberry sauce and cinnamon anglaise ($14). The Fresh Grill Buffet offers a wide array of scrumptious options for every palate. Soups and salads such as New England clam chower or chicken noodle soup along with grilled shrimp and chicken Caesar salad, Baja-style shrimp cocktail, Thai grilled beef salad and more are perfect meal starters.
A bounty of chilled seafood will be served featuring Alaskan snow crab legs, oysters on the half shell, Gulf shrimp cocktail, smoked Scottish Salmon and New Zealand Mussels. Savory carving board options feature roast prime rib of beef and maple roasted turkey breast.
Chef’s specialties include grilled to order New York steaks, baked fillet of salmon oreganata, braised beef short ribs, seafood cioppino, home-style mashed potatoes with pan gravy, and grilled seasonal vegetables. There will also be an impressive array of Italian, Asian and Latin specialties.
For dessert, there is something for everyone such as Fantasy Springs’ famous chocolate fountain along with a huge selection of cakes, pastries, assorted parfaits, warm bread pudding, bananas foster, red velvet cheese cake, sugar-free options and much more.
