April 27, 2022 – INDIO, CA – Celebrate the special Moms in your life with delicious dining offerings on Mother’s Day at Fantasy Springs Resort Casino on Sunday, May 8. Led by Executive Chef Freddy Rieger, the team of award-winning chefs has created several delectable menus to choose from.
The Bistro will feature an 8 ounce filet mignon with half Maine lobster Thermidor paired with pancetta-chive twice baked potato, sautéed asparagus and black truffle-Port demi-glace. The regular menu will also be available. 5 p.m. – 10 p.m. $68 per person. Reservations are recommended and can be made via phone (760) 342-5000.
Guests at POM will be treated to Salmon and Crab Wellington featuring Atlantic salmon, rock crab meat, spinach, a crispy pastry shell, citrus-butter sauce and a micro-green salad. The regular menu will also be available. Mother’s Day special served from 5 – 11 p.m. $34 per person.
The Fresh Grill Buffet is the perfect place to gather with family, friends and loved ones while enjoying a variety of culinary delights. There is plenty of room for large parties and everyone can fill up on an incredible spread of delicious dishes and celebrate without having to clean-up the kitchen.
Brunch features omelets cooked to order, cheese blintzes, almond French toast, Belgian waffles, warm biscuits with country gravy, chicken fried steak, New York bagels with cream cheese and lox, and more.
There will also be a huge selection of fresh salads, grilled vegetables along with Puebla style menudo and Amish chicken corn chowder.
Chilled seafood on ice includes oysters on the half shell, Gulf shrimp cocktail, Atlantic smoked salmon and New Zealand mussels.
Roast prime rib, Maple roasted turkey breast and honey glazed Virginia ham are carving board standouts.
Chef’s specialties include blackened fillet of salmon with Creole sauce, grilled New York steaks, Korean braised short ribs, shrimp and sausage Jambalaya, herb roasted turkey thigh, along with white cheddar cauliflower au gratin and more.
