Dec. 19, 2024 – INDIO, CA – Fantasy Springs Resort Casino invites guests to celebrate the magic of the season with its exclusive Christmas dining specials, featuring delectable menus crafted by the award-winning culinary team led by Executive Chef Freddy Rieger. Whether you’re looking for an intimate dinner or a festive family gathering, Fantasy Springs has the perfect setting to savor the flavors of the season at Bistro, POM, and Fresh Grill Buffet.
Christmas Eve
At Bistro, dive into Seafood Cassoulet featuring jumbo prawns, white fish, mussels, braised fennel, cannelli beans, smoked bacon fumet and garlic crostini. $38 per person. 5 p.m. – 10 p.m. Reservations recommended.
POM features a scrumptious Seafood Linguini Alla Vodka with sautéed lobster, shrimp, scallops, linguini pasta, vodka rosa sauce and asiago toast. $36 per person. 5 p.m. – 11 p.m. Reservations recommended.
Christmas Day
Guests at Bistro will indulge in Slow-Braised Lamb Osso Bucco, creamy parmesan polenta, roasted root vegetables, with a warm blood orange demi-glace. $36 per person. 5 p.m. – 10 p.m. Reservations recommended.
At POM feast on Honey-Soy Glazed Chilean Sea Bass, ginger-steamed jasmine rice, grilled asparagus, and ponzu butter sauce. $42 per person. 5 p.m. – 11 p.m. Reservations recommended.
The Fresh Grill Buffet will feature an abundance of delicious options, so come hungry! Brunch is featured from 10 a.m. – 3:30 p.m. and offers a vast selection of breakfast specialties including, cooked-to-order omelets, eggs Benedict, griddle favorites and all of the traditional savory sides.
Dinner starts at 3:30 p.m. and features soups and salads such as grilled shrimp and chicken Caesar salad, tropical shrimp ceviche, and Puebla style menudo and New England clam chowder.
Chilled seafood on ice such as Alaskan snow crab legs, gulf shrimp cocktail, oysters on the half shell, Norwegian smoked salmon, and New Zealand mussels are also on the menu.
The carving board features maple roasted turkey breast, slow-roasted prime rib with au jus and honey-Dijon glazed Virginia ham, and maple-glazed turkey breast. Chef’s specialties include grilled to order New York steaks ‘Churrasco style,” bacon-wrapped roasted leg of lamb with mint demi-glace, Boursin crusted baked fillet of salmon, North Coast seafood cioppino and more. Mashed potatoes with pan-style gravy, white cheddar cauliflower au gratin will also be available along with Italian, Asian and Latin specialties.
