APRIL 15, 2025 – INDIO, CA – Celebrate Easter Sunday, April 20 with a delicious dining experience at Fantasy Springs Resort Casino, where an exceptional array of seasonal flavors await at The Bistro, POM and Fresh Grill Buffet. From fresh seafood and savory lamb to mouthwatering specialties curated by the award-winning culinary team led by Executive Chef Freddy Rieger, there is something for everyone.

Enjoy brunch and dinner at Fresh Grill Buffet. Start off with brunch and enjoy custom omelets, eggs Benedict, griddle favorites, blueberry-cheeze blintzes, and sides along with New York Bagels with cream cheese and smoked salmon. 

Feast on Alaskan snow crab legs, oysters on the half shell, Gulf shrimp cocktail, and New Zealand mussels from the chilled seafood station. The carving board features roast prime rib, maple-roasted turkey breast, and honey-glazed Virginia ham.

Chef’s specialties include roast leg of lamb stuffed with spinach and Feta cheese, pork Wellington, Sicilian seafood with orzo, and barbecued St. Louis pork ribs. There will also be a delicious array of Italian, Asian, and Latin Specialties.

Fresh salads such as Hawaiian-style poke, roasted beet salad, chipotle chicken salad, and a cheese and charcuterie platter will be offered, as will New Jersey seafood chowder and Puebla-style menudo.

Desserts are plentiful with Fantasy Springs’ famous chocolate fountain, bananas Foster, a huge selection of house-made cakes and pastries, parfaits, red velvet cheesecake, sugar-free selections and much more.
