CELEBRATE NEW YEAR’S EVE AND DAY WITH DINING SPECIALS AND RING IN 2023 AT LIT AND TWELVE AT FANTASY SPRINGS
DEC. 21, 2022 – INDIO, CA – The award-winning team of chefs led by Chef Freddy Rieger have put together special dining options for New Year’s Eve and New Year’s Day at Fantasy Springs Resort Casino. Visit Fresh Grill Buffet, POM, and The Bistro for memorable and delicious dining experiences. The Regular menu at POM and The Bistro is also available.
New Year’s Eve Dining
Dine on Surf & Turf at POM which includes an 8 oz. filet mignon with a 6 oz. broiled Maine lobster tail paired with Boursin cheese whipped potatoes, sautéed baby carrots, French green beans, Port wine demi-glace, drawn butter and lemon brulée. $68 per person. The Bistro will feature a 16 oz. USDA prime boneless rib-eye steak served with a 7 oz. broiled Maine lobster tail. Sides include lobster mashed potatoes, grilled asparagus, porcini-Pinot Noir demi-glace, and white truffle bacon butter. $85 per person. Fresh Grill Buffet is offering a bounty of options including grilled shrimp and chicken Caesar salad, asparagus with garlic-lemon aioli, Hawaiian-style Ahi Tuna poke salad, caprese salad, Baja-style shrimp cocktail and Puebla-style menudo and seafood jambalaya.
There’s also chilled seafood such as oysters on the half shell, Norwegian smoked salmon, poached New Zealand Mussels. Carving board specialties feature roast prime rib of beef and maple-roasted turkey breast.
Chef’s specialties include grilled to order New York steaks, seafood Mare Chiara, Teriyaki-glazed fillet of salmon with pineapple relish, baked chicken Bellagio with arugula and balsamic glaze along with braised Swiss chard and pesto grilled vegetables. Dessert offerings include Fantasy Springs’ famous chocolate fountain, huge selection of cakes, pastries, Bananas foster, sugar free treats and more. 4 – 10 p.m., $44.99 adults; $34.99 children 3-11.
New Year’s Day Dining
Kick off the day with brunch at Fresh Grill Buffet featuring breakfast favorites such as omelets made to order, eggs Benedict, smoked bacon, country sausage, egg and cheese stuffed mini-croissants, griddle specialties, New York bagels with cream cheese and Nova Scotia lox.
The dinner bounty features an array of soups and salads including asparagus with olive tapenade, watermelon-cucumber salad, grilled chicken and shrimp Caesar salad, black mussels with red onion and chive mignonette, and puebla-style menudo and chicken wild rice soup.
Chilled seafood choices are Alaskan snow crab legs, oysters on the half shell and Alantic smoked salmon. Carving station features roast prime rib, maple roasted turkey breast and honey glazed Virginia ham.
Chef’s specialties feature grilled-to-order New York strip steaks, braised pork osso bucco, baked salmon filet with tomato-cornichon caper relish, barbecued St. Louis ribs, bacon roasted brussels sprouts, mashed potatoes with natural pan gravy plus a generous selection of Italian, Asian and Latin options.
Top off the meal with sweets such as the chocolate fountain, cakes, pastries, warm bread pudding and much more. Brunch served 10 a.m. – 3:30 p.m.; dinner served 3:30 – 9 p.m.; $44.99 adults; $34.99 children 3-11.
New Year’s Eve Celebrations
LIT: Hit the dance floor at LIT and get down to the sounds of the band Tre’sure performing live in a classy nightclub setting. Admission is free. Guests must be 21.
Twelve: Head up to Twelve and enjoy million dollar views while Steel Rod and special guests play a wide variety of chart topping songs. Admission is free. Guests must be 21.
